As we are about to end our summer vacation of this year, my girls are starting to get restless and I'm running out of entertaining ideas. Last Sunday, my oldest ventured herself into the kitchen, and asked for a chance to bake all by herself. I won't tell you I wasn't worried about the big mess she was about to make, but her boredom was bigger that my worries. To tell you the truth, she was incredibly careful! and she baked this delicious banana bread all by herself. What can I tell you, I'm a proud mama. But my pride not only comes from the fact that she was able to bake by herself, but also from the fact that she has overcome the challenges of being a girl with food allergies. She's allergic to a hand full of ingredients usually found at any regular kitchen.
If you're the parent of an allergic child, you know what I'm talking about. The first years of life of these kind of children tend to be very stressful, and frustrating for the family. Now that she's almost 11 years old, I can tell you that I'm starting to see light at the end of the tunnel. Not because she's outgrowing any of her food allergies, but because we have learned to live with them in a harmonious, and almost effortless way.
